Villa Betti di Monteciccardo / Marche
Nestled within the company and serving as its flagship, the Marcolini Olive Mill has upheld a family tradition linked to the production of high-quality extra virgin olive oil since 1896. Situated in the picturesque Marche landscape, amid the gentle hills between Pesaro and Fano, the current mill continues the production by combining age-old wisdom with modern technologies.
While olive oil is a timeless product, ensuring its quality also requires technology that rationalizes various processing stages. The new plant at Rapanelli was a complete innovation, transitioning from the old stone grinding procedure to a new continuous cycle processing system with cold extraction. The plant, made entirely of 100% stainless steel, has a processing capacity of 10/11 quintals per hour, allowing the olives to be processed in the shortest time possible after harvesting.
This type of machinery enables the production of a product of the highest quality based on a few key principles:
This processing method ensures extra virgin olive oil that maintains two fundamental requirements: low acidity and a high number of polyphenols.
